Single Origin - Finca Los Nogales Partial Decaf

Finca Los Nogales is an award winning and innovative farm, owned by the Hernandez family. This Typica variety coffee has been used to win coffee brewing championships in the past, and now we are bringing it to you!

The coffee undergoes a 90-hour fermentation process using sourdough-like starters. It is then washed to remove residual mucilage.

A special part of this coffee is the incorporation of a special coffee-derived caffeine solvent. Similar to Ethyl Acetate (EA) being created from sugar cane, the solvent is made from coffee's pulp through enzymatic and fermentation processes.

The coffee beans are soaked in the solvent for 48 hours before being washed again with water to remove the natural caffeine solvent. 

It is then slow dried for 8 days to ensure stability and freshness.

While the coffee has been partially decaffeinated, our measurements ready 100mg per 10g serving, which puts Los Nogales in the 'moderate caffeine' category similar to our Slow Burn blend.

We have roasted Los Nogales lightly, with a filter-style roast profile in order to preserve the intensely bright fruit acids found in it.

Look for tasting notes of: Grape candy, Apricot, Wildflower Honey, Grapefruit, Passion Fruit, Watermelon, and Raw Cacao.
